  • 1 lbfirm tofu
  • oil for deep frying
  • 5ripe Roma tomatoes
  • 1 tbsptomato paste
  • 0.5 tspfish sauce
  • 1 tspsalt
  • 2 tspsugar
  • 0.5 cupwater
  • 1 stalkfinely sliced green onions

Instructions

Cut the tofu blocks in half lengthwise, then into smaller pieces

Press out moisture by placing the tofu between paper towels with a slightly weighted plate on top for 20-30 minutes

Heat oil to 300°F and deep-fry 4-6 pieces of tofu at a time until golden brown, then drain on paper towels

Slice the tomatoes into 4-8 bite-sized pieces

In a pot, combine the tomatoes, tomato paste, fish sauce, salt, sugar, and water

Bring to a boil on high heat, then lower to a simmer at 30% heat for about 10 minutes until the tomatoes soften and cook through

Toss the fried tofu into the pot and mix for a few minutes so it warms up and absorbs the sauce

Garnish with sliced scallions
